As one attendee stated, “I learned a great deal and was able to meet with so many different peo- ple. The field is so broad and it [the AEC] showed me I can do so much more.”

• Transforming Food Safety at Temporary Events: The Impact of Specialized Inspector Training on Food Safety Ratings • Outbreak in the Woods: A Possible Foodborne Outbreak at Summer Camp • Food Safety Management Systems: Building Sustainable Approaches Into Your Regulatory Approach Just as environmental health evolves, so do the educational opportunities in emerging issues. We were pleased to offer new topics to our attendees that were highly attended. These topics included artificial intelligence (AI), environmental health issues related to people experienc- ing homelessness and tent encampments, and new perspectives. The following is just a short list of these sessions that sought to shine a light on current and emerging issues within our profession: • Utilizing Civil Penalties to Gain Compliance: Perspectives From a Local Health Department

The last day of the conference, Thurs- day, July 18, provided attendees with one last chance to get the education they needed through 19 different educational sessions rooms that ran in the morning. Again, we offered sessions from Penn- sylvania perspectives, prerecorded pre- senters, engaging learning labs, and the NEHA-FDA RFFM Grant Program. Round- ing out the education were sessions on climate and health, emergency readiness, food safety, general environmental health, healthy communities, infectious and vec- torborne diseases, water quality, and workforce and leadership. The four most popular topics included food safety, general environmental health, water quality, and workforce and leader- ship. The highest attended individual ses- sions explored specific examples of food safety and management, including: • Mocktails, Potions, and Elixirs: An Overview of Unapproved Additives Flooding the Market
